smashed cucumber salad

hangry or just like to smash stuff this simple salad will have you less frustrated in no time.



serves 4

10 minutes


ingredients

  • 500gm cucumber

  • 2 tbsp chopped cilantro/coriander

  • 2 scallions/spring onions finely sliced

  • 1 tbsp granulated sugar

  • 2 tbsp rice vinegar

  • 1 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp minced ginger

  • 1 clove garlic minced

  • 1 tsp toasted sesame seeds

method

  1. top and tail the cucumbers and place in a ziplock bag. smash the cucumbers with something heavy (mallet, rolling pin, flat side of a cleaver) to split and bruise.

  2. remove from the ziplock bag and roughly chop into 2-3cm chunks. toss in a bowl with the chopped coriander and sliced scallions.

  3. mix together the sugar, rice vinegar, soy sauce, sesame oil, minced ginger, minced garlic and toasted sesame seeds.

  4. add dressing to cucumbers and serve as a salad or with your favourite protein.
